Easy Gochujang Aioli

This spicy gochujang aioli is a creamy, flavorful sauce made with Korean chili paste, fresh garlic, rice vinegar, and sesame oil. A quick, versatile sauce perfect for burgers, rice bowls, and dipping.

Ingredients 

  • ½ cup mayonnaise
  • 1 tbsp gochujang (Korean red chili paste)
  • tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp lemon juice (or lime juice)
  • 1 tsp sugar
  • 1 clove fresh garlic, minced

Instructions

  • Combine all ingredients in a mixing bowl.
  • Whisk until smooth and creamy.
  • Taste and adjust seasoning. For more heat, add a touch more chili paste. For more sweetness, add a small amount of sugar.
  • Store in an airtight container for up to 7 days.

NOTES

  1. Whisk until completely smooth so the gochujang blends evenly into the mayonnaise.
  2. Let the aioli sit for at least 30 minutes before serving if you have time. The flavor mellows and comes together better after it rests.
  3. For more heat, add a little more gochujang. For a slightly sweeter balance, add a little more sugar.
  4. Lemon juice or lime juice both work in this recipe.
  5. Store in an airtight container in the refrigerator for up to 7 days.
  6. Do not freeze. The mayo base can separate after thawing.
